Ingredients

  • 2 1/2 cups of non-dairy milk (Recommended: Oat Milk)

  • 1 tbsp apple cider vinegar (or regular vinegar)

  • 1 tsp neutral oil

  • 1 tsp organic vanilla

  • 3 tbsp Brown sugar

  • 1 1/2 tsp baking powder

  • 3/4 tsp baking soda

  • 1/4 tsp Himalayan Salt

  • 1 tbsp chia seeds

  • 1 tbsp Cinnamon (optional)

  • Agave syrup or Maple syrup for serving

  • Toppings of your choice (e.g., banana, blueberries, apples)

Preparation

Step 1


Create Vegan Buttermilk: Mix non-dairy milk and apple cider vinegar in a bowl. Set aside for 10 minutes.



Step 2


In a large mixing bowl, combine the remaining ingredients: oil, vanilla, brown sugar, baking powder, baking soda, salt, chia seeds, and cinnamon (if using).



Step 3


Add the vegan buttermilk to the dry mixture and stir until well combined.



Step 4


Preheat a frying pan. Pour pancake batter onto the pan, cooking for about 2 minutes on each side. Use medium heat to prevent burning. Be patient; it's worth the wait.



Step 5


Once cooked, transfer the pancakes to a plate.



Step 6


Top your pancakes with your favorite toppings, such as banana slices, blueberries, or apples. Get creative with fun designs to reconnect with your inner child.



Step 7


Drizzle with agave syrup or maple syrup, based on your preference.
